When adding or editing a category, there is a navigation menu at the top.  Click on the Photos option.  You can add category photos from this page.  This includes the category thumbnail, category top, category bottom.

The thumbnail displays on the category list pages.  The category top image will display at the top of the category list the category bottom displays at the bottom of the category list.
